Bristol beer fans rejoice – there is a new beer bar in town…
The team behind The Old Bookshop and Bristol-based brewers Wiper & True have come together to launch The Old Butcher’s, a new drinking spot on North Street in Bedminster, two doors up from The Old Bookshop.
The beer bar will serve from six Wiper & True draft lines fresh from the brewery alongside limited editions, exclusive pilot brews in development and a monthly bottle list curated by the brewers at Wiper & True to showcase some of the world’s most exciting beers. The bottles will also be available to buy just down the road in Corks of North Street, for if you find a particular brew that you like.
The new venture has been a labour of love for both owner Ben Gatt and Michael Wiper. Renovations included unearthing and restoring the entire original wall tiling from Collard’s family butchers and building their brand new bar.
Ben commented, “we’ve been very excited about this bar not only because of the quality of Wiper & True’s beer but also in restoring the interiors of The Old Butcher’s and creating somewhere that we hope the neighbourhood will be proud of”.
Michael Wiper also added “Bristol is such a creative city. It’s a supportive place with so many interesting people who are happy to work together and collaborate. The Old Bookshop has long been a part of that energy and we’re looking forward to The Old Butcher’s bringing even more energy to the city’s food and drink scene”.
There will be further exciting announcements in the coming months from these guys as the kitchen is also going to be opening soon. In the meantime, The Old Butcher’s will open on Saturday 1st April.
